SENSORIEL EXPERT...
After having developed the Well-being
part within the 5-star Relais & Châteaux
of La Bastide de Saint Tropez, it is in
2016, within the prestigious Château de
Berne in the south of France, that Karine
will begin her collaboration with
Benjamin COLLOMBAT to combine
relaxation & gastronomy.
A pioneer in taking into account
hypersensitivity in the world of catering,
it is her high environmental sensitivity
and her particular sensory processing
that will serve as a guideline for the
experience.
Karine has the magnificent task of
guiding the guests throughout the
experience, she knows the dishes by
heart and talks about them like a
perfume. She has tasted and analyzed
them all so that all the senses are
nourished during the tasting.
Particular attention has been paid to the
dishes, shaped by hand by Poterie
Serghini, to the choice of cutlery to keep
the tongue attentive and many other
steps invisible to the naked eye.
Beyond a gastronomic & sensory
journey, it is at the heart of a rich inner
world that the founder invites you.

After spending a year with « L’Amphitryon » 2 stars in the Michelin guide with chef Yannick Delpech, it is in London that he will join Helene Darroze in her establishment « at the Connaught », 2 then 3stars in the Michelin guide in 2021.
He will then continue with the opening of “l’Hôtel Chais Monnet”, in Cognac in the South-West region of France where he will be responsible for the pastry section of the gourmet restaurant “Les Foudres” which will also obtain 1 Michelin star.
In 2019, it is within the 5 star « Atlantis the Palm » in Dubai, that he will assist Chef Grégoire Berger before joining the SINGULIER PLURIEL adventure in Marrakech.
